I understand the technical difference between first and second focal plane scopes.  The advantages of a first focal plane scope make total sense to me.  But I can NOT understand the appeal of a SFP besides the fact that generally speaking, they're less expensive.  Anybody have any ideas?

Not many advantages other than cost. I recently bought a nice 1-6x scope and went with the SFP. My reason was at 1x the reticle was so small it was hard to see, and I can just memorize a basic dope chart for the BDC at 1x and 6x. 

If it's just a hunting rifle that you plan to zero one time and be done with it, there's not much need to spend the extra cash.

Familiarity, I grew up on SFP scopes. I have a range finder and any location I would be shooting at anything serious I have range cards with dope. If I were military, LEO, or a serious competitor I could justify the extra cost but for me the money is better spent on ammo for most rifles I own.
