Dad decided to try something new with part of the Whitetail buck he bagged during rifle season and had the meat processor make him something they call venison bacon. They finished up his order recently and he mailed me some.  It is cured and smoked like regular bacon and I have fried it in a pan and also cooked it per his recommendation which is to microwave it for 2:30 minutes.  It is very good but we have discovered that it does not seem to get crispy like regular bacon no matter how you cook it.  I may try some in the oven next and see how it goes.

Yeah, it is probably not too much different from summer sausage processing-wise but they did some kind of sugar cure that is kind of mapley (might have used maple syrup, it's in pretty abundant supply locally) and this makes it taste more like bacon I think.

Yeah, that's a pretty good comparison kind of is but the flavor is a bit different I think.  Probably shouldn't admit it but I'm a big Spam fan and it may partly be why I like this stuff.

I will. Venison, deer and deer hunting are all a religion in North and Central Wisconsin. CWD and the mistakes made to contain it are jeopardising that.
