We did a rack of baby backs... 250 for bout 3.5 hours... Used pecan rub... Cabellas sweet rib rub and some webbers bbq rub... Lol. Hey it's pretty good stuff.... Used Johnny Trigg method of when they are done... Push a toothpick in between the bones. If it slides in kinda easy... But not too easy pull em out..... Wash

I use timed for ribs....I use the bend test and look to see how the meat shrinks on the bone...and the final test a toothpick inserted between bones will tell ya pretty much...then again its done when its done always works Wash
