Ya'll gotta try this Cajun caviar recipe that a friend of mine gave me years ago. 1 Cup mayo (Blue Plate) 2 Cups finely shredded cheddar cheese 2 Cups chopped pecans 1 Cup green onion tops finely chopped 1 10 oz Container of red pepper jelly (McIhenney Co Tabasco brand or whatever you can find) Butter crackers (like Town House or Club) Start by toasting pecans in oven at 300* for 10 min. Let cool for 10 min or so. Mix pecans, cheese, mayo, and green onions in a large bowl. Spread mixture on a pie dish and level. Spread red pepper jelly on top of mixture.
