Hunting with an large frame platform

I visited my lgs and he had one more aero m5 upper hidden away that he let me purchase. I already built an upper just for steel targets so I thought maybe I could build this upper for hunting whitetails and the occasional coyote that gets in the way. 
Has anyone successfully used a large ar platform for hunting and if so, how is it set up? I was thinking 7mm-08 for the caliber with a 16”-18” lightweight barrel, but im open to any and all suggestions!

308 with 168 grain Barnes TTSX killed 8 or 9 elk ,many deer and they are all one shot kills out to 400 yards with a 16 inch barrel like a light switch! they work great they don't rust, bust, or collect dust! they work great!

My 16" 308 and 18" 6.5 Creedmoor have taken several deer here on the farm. Got to keep the freezer full somehow.

I set up a 16" 308 Windham just for that purpose.  Kept it relatively light by using a Daniel Defense butt stock, a Leupold 2x12 scope and a light muzzle brake.  Works great for whitetails using Federal 150g Power-shok SPs.  Hope to some day take it out West for an elk. I'd probably up my bullet weight in that case.  Metal hand guard gets cold; wear gloves.

I have a few questions for you, if you dont mind.

Is it worth it to use a muzzle brake on a hunting rifle, and regarding the cantilever mount, is that a Leupold mark ar mount? If so how do you like it, I have seen them go for a pretty good price so I was suspicious about the quality.

It is pretty simple a DPMS LR 308 I put a gator grip on it to save weight and it came with a 16 inch barrel it shoots sub MOA with both 308 ad 6.5 Creedmoor, been reliable since day one which was 13 years ago. 168 grain bullets ad 308 are like peanut butter and jelly it just always works.

oh ad I use both a muzzle break and a suppressor as both help with accuracy.
