Don’t get a Japanese high carbon steel cleaver, unless it is really massive. The steel is so hard that it can crack. Japanese knives are so hard they hold an edge like forever, but bone for instance can break the edge. German knives are softer, need sharpening,more, but sharpen easier. Same with Chicago cutlery. Think I may look for a Chicago cutlery cleaver.
