Great picks brother and great memories. Back in the day I saw anybody and everyone that came through the city. Sound guys job was to replicate the album sound and they did a phenomenal job. Yes had one of the best sound systems.

Try more than one spot. The other parts we braised while at temp they weren't as appealing visually and a little tough. Roasting is the only way. Still ate like I was going to the electric chair .

We thought the breast was done had to check the other side was only 150* needs 165* back in oven breast is easy to dry out gotta keep a eye out.

Beauty brother maybe move the leg probe over on the leg. Breast cooks quicker then legs,legs dark meat could be under done. Stuffing in a pan instead of inside the bird Hot italian sausage. Thermo works probes.
