The other that made me laugh was a lady friend was over one night and she says there’s a car parked infront of your van! Again 11pm no reason to be there I said im going out there. I walk out I can see a person reclined in a seat on there phone, I knock on the rear driver side window and blow them up with a flash light at the same time this bitch damn near goes thru the roof I scared her so bad! She tells me she’s texting her husband, I told her go park at the piggly wiggly or maybe the church.

Yea I really got back to basics especially on beef. @DNP got me hooked out tri tip after a desert shoot, I tried everything on it just cuz I ate so much of it SPG Is by far the best. My one exception to that is if I’m making skirt or flank tacos, and heath riles has a SPG JALAPENO season that adds a little kick i really like, other wise beef and venison is SPG from hear on out and I only used SP on this steak

Top three steaks Ives ever done! I took it to 115, itv traveled to 120 while the grill came to 500°, 10 min or so. Coated in tallow and seared to 132-133. I did fail on the corn bread I was still good jalapeño cheddar upside down it was suppose to have a caramelized sugar top but after fucking up three tries I said fuck it photos didn’t load in order 1) off the sear 2) before the sear/end of the slow cook 3) just before it went on slow and low after 8 hours of salt brine in the fridge 4) unmolested outta the fridge 5) sliced the cap 6) plated dinner 7) jalapeño cheddar corn bread

My buddy and I were talking about steaks because I got a big tomahawk for my birthday. we both do a lot of reverse searing, I’ve been doing it with big thick center cut pork chops too. Anyways I told him I was going to try a new way and as I was coming here to get that link for the first video 98 posted, he sent me this Alton brown link. I thought it was funny that we basicly sent each other the same thing we wanted to try. I really like Alton he’s one of the main chefs who got me into being more adventurous in cooking, mainly because he tells you the science and the why behind doing things a certain way instead of just “because I said so”. So I combine both 1) I didn’t have the time to salt before bed, so I did it this morning to get in that 8-12hr window. B) Alton says EVO I’m going with beef tallow like the other guy but this steak is to big for a pan so I will coat the steak and my sear plate and sear on there 3) I’m sticking to just salt and pepper I’ll post my resaults when I’m done

Few days ago I brined some grape tomatoes like refrigerator pickles they came out really good I’ll include the recipe in the photos. Today I tried cowboy candy relish (new recipe), spicy dilly beans and we worked on a resturant style salsa I like it but the lady friend says it’s to hot for her!

I do similar, I’ll have to try the season night before, it makes sense that’s how I do my brisket and butts. When I reverse sear I go to 105-110 so I get more sear. He’s right about the rest many say you don’t need the rest because of the rest between the smoke and sear. Have you guys seen that shooter Jennings (Waylon’s son) found a bunch of his dad’s old unreleased recordings? This reminded me of it because he’s producing it alll on late 70’s equipment to keep the sounds. The first album Song bird came out last fall, it’s pretty good kinda mellow. I pre ordered diamonds it comes out in oct it sounds like it’s going to be alittle more rowdy. Then there will be a third next year
