 My weekend off day breakfast is hashbrowns with peppers and onion, a good shake of Montreal Steak Spice. When almost done add left over meat, break 2 eggs on top then shredded cheese. Place cover on pan,turn heat down and continue to cook till eggs done.

I tried a Chef Jose Andres’ egg recipe and loved it:

Whip egg with a spoon full of mayo (full-fat), pinch of salt and pepper, butter for greasing, and little Parmesan. Microwave in a very small bowl or cup for 45-60 seconds.

The mayo keeps me from making it daily but I love it.
