One of the strangest things I've ever seen in my life happened in Canada. I was staying overnight at the Frontenac and part of the deal was you got to eat a buffet supper.

 

The buffet setup was like half a city block long, with everything you can think of. And most people skipped all of it after the salad at the front. Then they went to the end, and the end was raw salmon, sliced razor-thin. They ate it in piles.

 

Like Canadian sushi, I guess.

 

Well, they were eating so much of it that I did, too. Raw salmon is pretty darned good! Although, gotta say, smoked salmon is awesome.

 

Speaking of smoked fish, my grandparents used to live right by a river and fished a lot. Basically, all they caught was carp. My granddaddy got a smoker and started smoking carp. Smoked carp might be better than smoked salmon, no kidding. You gotta pick around the bones, but dang, I could sit there for hours sorting out that savory goodness.

I love smoked trout and salmon, I've heard smoked carp is good I've never had it. I've had it pickled before that's good!!

I was in Denmark and some consultant took us all out to dinner.  The prices were like $100 bucks just for the appetizers and I ordered the smoked salmon.  They came out with a side of fish almost as big as that hog in the photo.  5 different kinds of sauce and cut it into thin slices for me and anyone else who wanted some.  Had them little fancy spoons for the sauce that you barely get a half a bump with but I was thinking, "Sauce?  Really?  Just gimme the damn salmon man and let's get ta chompin"...

 

I would never have gone to that place had it not been his choice but oh maaaaan was that a meal.  I think the entree was like 175 bucks or something but after the salmon, I can't even remember what the heck I ate....

Depends on which great lake. With Chinook, "you are what you eat" is definitely true. In Lake Superior where the Chinook feed mainly on Cisco and Smelt, they are very good. Different from Ocean salmon, but quite good. In Michigan/Huron, I don't think they taste quite as good. Probably because their main diet is Alewives, which are not real high in Alpha 3 Omega fatty acids, so the fat content of the meat is lower. Best Salmon I ever ate were silvers I caught out of Ilwaco years ago. Next best out of the Talkeetna river in Alaska. I think the shrimp and squid ocean salmon eat give their flesh its distinctive flavor versus Great Lakes salmon.
