I grew two plants this year (have to have two for pollination) well I'm gonna end up with a bumper crop. So besides salsa/salsa verde you guys got any favorites? I found one for a pork stew that sounded good too

I like to make mine with sliced tomatoes and avocado, with some black frejoles on the side. I tend to make it a bit too spicy for her. The fresh tomatoes and avocado cool her mouth and blast a little extra flavor.

Robocop1051 Posted August 8, 2014 Report Posted August 8, 2014 I fry the corn tortilla pieces (pochos use flour tortillas) till they're dark brown and extra crispy. Then I add eggs and mix together until fried well. Next, I add a can of El Pato Mexican tomato sauce and let it all cook together. The sauce (similar to enchilada sauce) softens the tortillas a bit and adds the spicy flavor. Sprinkle with cheese, and serve with a side of frejoles. The wife likes sliced avocado on top. I prefer salsa or just some chopped tomatoes. If I'm extra hungry, I add chorizo or left over taco meat.... any meat (pollo, carnitas, carne asada) can be "taco meat". My father only cooks the tortillas with eggs alone, and eats it with salsa for breakfast. One serving it usually 4 tortillas, 2 eggs and 2 oz of sauce.

392heminut Posted August 8, 2014 Report Posted August 8, 2014 The way we do it down here on the border is with the corn tortilla pieces smothered in a red enchilada type sauce and then a couple of eggs fried over medium on top. Served with a side of hash browns and refried beans if it's for breakfast or refried beans and spanish rice if it's lunch or dinner. Diced onions optional.
