So I know a few of you said you have some kinda Hispanic heritage in your family. I grew two plants this year (have to have two for pollination) well I'm gonna end up with a bumper crop. So besides salsa/salsa verde you guys got any favorites? I found one for a pork stew that sounded good too

My wife requests chilaquiles at least once or twice a week. I like to make mine with sliced tomatoes and avocado, with some black frejoles on the side. I tend to make it a bit too spicy for her. The fresh tomatoes and avocado cool her mouth and blast a little extra flavor.

My wife requests chilaquiles .

You get corn tortillas, tear them into small [not tiny] pieces. Then fry them and add scrambled eggs with you favorite salsa.Or wife sez you can add chicken.I use eggs.

I fry the corn tortilla pieces (pochos use flour tortillas) till they're dark brown and extra crispy. Then I add eggs and mix together until fried well. Next, I add a can of El Pato Mexican tomato sauce and let it all cook together. The sauce (similar to enchilada sauce) softens the tortillas a bit and adds the spicy flavor. Sprinkle with cheese, and serve with a side of frejoles. The wife likes sliced avocado on top. I prefer salsa or just some chopped tomatoes.

If I'm extra hungry, I add chorizo or left over taco meat.... any meat (pollo, carnitas, carne asada) can be "taco meat".

My father only cooks the tortillas with eggs alone, and eats it with salsa for breakfast.

One serving it usually 4 tortillas, 2 eggs and 2 oz of sauce.

The way we do it down here on the border is with the corn tortilla pieces smothered in a red enchilada type sauce and then a couple of eggs fried over medium on top. Served with a side of hash browns and refried beans if it's for breakfast or refried beans and spanish rice if it's lunch or dinner. Diced onions optional.

You know, Bobby Flay came to San Antonio N.M. and did a throwdown at the Buckhorn Bar and Cafe with green chile cheeseburgers. He tried to fancy it up and failed miserably. Just goes to show sometime the basics are the best.

Ron, if you get out here I'll make sure you get some of the most fantastic food you've ever had. I've located 5 places in New Mexico that have the best green chile cheeseburgers in the country, all between Albuquerque and the border.

I'm there Larry. There's no "if". I will make it out there. You're gonna find a pale white-guy knocking on your door saying Hi. It's just a matter of time my brother. And I hope you won't hold it against me if I bring a friend called Rene (I'll drive the bastard) with me. <laughs>
