Came home with a 7.5 and a 9.5 butt. Gonna get some beef tomorrow. Get these in brine tomorrow morning.

Did not do the quick chill method. Can't remember what the hell I did now. Edit it to add...I used ice to get my water below 40 prior to mixing. Removed leftover ice before mixing. Probably not the best method, but it worked.

Sure wish our business would tank. We've been running strong since my grandfather started it in 59. If things weren't decent financially...it would make the move a whole lot easier. Can't pick up and move a civil engineering and land surveying company. Knowledge of the local area is a key component. My dad had been looking out of state. He's at a point he could do his end from anywhere. I've got a lot longer to hang around here. Was hoping we'd split into 6 states. San Diego, and Imperial Valley are fairly conservative.

Looks like the Hogdon lever evolution powder was used for all the Hornady factory rounds...except the 45-70. Bastards. Guess that will go towards some 30-30 ammo. Should have researched first....dammit.

Happened to be passing by a Bass Pro Shops today on the way home from the inlaws. Picked up a couple boxes of Hornady 325gr FTX for the 45-70 and 2 pounds of powder. Got the Hogdon Levereveloution and IMR 4198.

Inlaws. Haven't seen em since the baby was born, so it was time to come out and visit.

The Santa Maria is pretty decent on the tri tips. Wash gave us a great pointer with Oak Ridge. Great stuff.

Wanted to add....only hing in the kit I didn't really care for was the carne costa. But I want to try it on a few other things before I decide for sure. It wasn't bad....just not special.

I bought a similar kit. Careful...it just makes you want to buy more. I didn't lift the lid at all til it was done. Set it and forget it until the temp buzzer went off. The brine was helpful for sure. I added the sweet rib rub to the secret weapon just to give it a little sweeter flavor. Can't cook this weekend and it kills me. Next weekend....its on.

I'll see how the sights do this weekend. Could only grab a couple boxes of 405 core lokt. Rifle has a bit of brown in the checkering....I'll get used to it.
