    Tri tip again tonight. Threw two prime tri tips covered in Oak Ridge's Santa Maria seasoning. Came out great. Set at 250 with a blend of pellets and a little extra hickory smoke added in. Pulled them at just over 120 and moved them to the gas grill with 3 burners on high for about 2 minutes each side. Let sit for 15. Carve. The seasoning is quite "spicy". Not hot, almost over seasoned. Might have to tame it down a hair on the next set. These were just about perfect other than that.

    870 gear

    He ran an 870 with a pistol grip at the range last Saturday. He says no pistol grip for him. Thanks for the input guys. I tried to tell him we could watch for sales and piece some stuff together, but he wants it immediately and bargains don't do anything for him. Not sure what put a burr in his ass over this one. The department he is under doesn't even use shotguns anymore, he's says they have switched to AR's. The group he's with only runs .40cal Glock and a 30-30 lever. Ran two shotgun classes and had to get himself an 870. Yes, he's a little late in the game. He's 57. He joined up with our local mounted reserve. It's a group full of ex police chiefs and because of that, they have set themselves up with a pretty good program. He'll work one main parade, ride at the mall during holidays, and help with sheriffs on search/rescue. All the perks of being LE....not a 40 hour a week job. They insure the truck trailer and horses while on duty. When I get a little more free time, and my fat ass in shape...I'm going to join up as well. They are looking for some younger guys.

    the bull pup and the shorty are cool, but he will wind up using this in classes and maybe on duty once he is active with the local police department. He's through everything he needs and he's doing the second phase of the academy for a little extra training/knowledge right now. i should have mentioned in the first post, where is the spot to shop with decent prices for tactical/LE 870 gear. Thanks guys.

    my dad just picked up a new 870....well, paid for it. Can't take it home for a few more days. Where is the right spot to pick up some parts? He is set on wanting to try out the magpul furniture. Already has an extended tube I believe. What are the other fun swaps on this gun?

    10.5 pound whole packer. Choice. Good fat cap on it. Will trim it up and get it on in the morning. Got a little more reading to do tonight. It's getting the oak ridge black ops rub thrown on right away in the morn.

    Tented for 15 when it was done. Tri tip is all over out here. I'll throw some in an overnight envelope and send it out.... gonna have to order some more pellets already.

    Tonight's tri tip could have been pulled about 10 degrees sooner. Cooked at a little over 400 with the smoke daddy kicking in a 50/50 pecan and hickory. This was a pre marinated jobber. Pulled at 135 but might have hit a little higher. Reverse sear for 2 minutes/side on the gas grill. Will try again, but pull at 120-125. Wasn't too tough, but approaching it. Not much left. Even my boy who dislikes a lot of red meat and bread too....devoured his sandwich. I can't wait to be able to do this right...it's gonna be great. Swithched the Traeger to P0 and with it running on high it bounced between 403 and the highest I saw was 416. Was about 55 outside, no wind. Will have to see how it does down at 225 again. Built in digital readout was sticking around 375 (high setting aims for 450). I may wind up trying that other controller down the road, but I'm happy for now. Mathis was the best(only) pic I got before it all disappeared.

    Tasted great. For the most part, the meat was good. Struggled a little with some of the membrane and the thinner edges were borderline over done. Not at all disappointed on the taste level. The dominator rub was beautiful! Tri tip tomorrow night.

    Well, first set of ribs done. These were a little fatty, but they taste good.
