  1. So first batch done. I made some different thicknesses to compare drying rate, and different chew texture etc Flavor wasn't bad but a touch bland but will definitely tweak the spice mix, do a batch with chilli but the next batch with be rubbed down with Dillio Dust courtesy of @98Z5V
  2. Importance of Original Knowledge Principle #1: Don't trust retellers, get hold of the original sources. A new monk arrives at the monastery. He is assigned to help the other monks in copying the old texts by hand. He notices, however, that they are copying copies, and not the original books. So, the new monk goes to the head monk to ask him about this. He points out that if there was an error in the first copy, that error would be continued in all of the other copies. The head monk says, "We have been copying from the copies for centuries, but you make a good point, my son." So, he goes down into the cellar with one of the copies to check it against the original. Hours later, nobody has seen him. So, one of the monks goes downstairs to look for him. He hears sobbing coming from the back of the cellar and finds the old monk leaning over one of the original books crying. He asks what's wrong. "The word is celebrate," says the old monk with tears in his eyes.

  5. The ferry does cut through US waters but not through San Jauns.You are likely thinking of the pass between Mayne and Galiano Isl. Brackendale is 40 min north of Horseshoe Bay and 55 min north of me.
  6. So built a biltong dryer and started my first batch of biltong. Biltong was originally created by Dutch pioneers in South Africa, “Voortrekkers”, who needed reliable food sources on their long treks across the continent. The method and spice mix hasn’t changed much in hundreds of years, but a few variations have appeared recently, like ‘piri piri’ biltong and the use of additional ingredients like worcestershire sauce and dried chillies. It's their version of jerky but doesn't use heat and more about airflow. I've added a web pic of what the finish product looks like. People add chili or Peri-peri to make it spicy. This is commonly done with game meats as a way to preserve them.
  7. If you're ever up this way in winter Brackendale( approx 1 hr north of Vancouver) average of 1300 eagles gather, in the summer they spread out to the Gulf Islands. They seem to have adapted to the urban environment here but it doesn't hurt that there are several rivers with salmon runs
