Thanks guys It was a great piece of meat about 4 and 1/2 hours on the Treager At 225 Inside temp 120 then took it off and turned it up all the way to 475 when it met that seared it for ten min and ended up at 130 perfect medium rare...we grown Harse radish and it is therm o nuclear it was awesome...

Home grown horse radish is the best!!! A guy I used to hunt with grew it, best thing for stuffy head plugged sinuses!!!

Nice looking roast!

Great minds think alike. I made a 2 1/2" thick cut bone in rib eye Sous Vide for Thanksgiving dinner. I asked the wife what she wanted with it and she told me cauliflower "potato salad". That was fine with me cause I'm in ketosis and can't eat starch. Well, I can eat starch but I can't eat it and stay in ketosis and I definitely want to stay in ketosis (6 1/2 years now).
