Been getting caught up with this guy's vids lately.  It's a cooking/griddling rabbit hole...  :laffs:

Gathering more ideas for Fall Shoot.  I have 2 Camp Chef stoves, and a full griddle, full grill, half griddle, and half grill.  I might need to buy another full griddle...   :lmao:

Opinion post .. I witnessed a coworker bring in some hokey pucks ( 1/2" porkchops bonless) his wife cooked. It was a Costco purchase, so like 6.. he has to eat this so as not to waste it. She is very finicky when it comes to food and meet has to be well, hockey pucked! Everything well done. Hotdogs burnt! That level of fubar! Would you eat that if she made it ? or cook your own meals made to order?

Had a buddy that liked things well done( his definition) I'd have take my steak of the grill and letting it rest which was the point at where he'd be flipping the steak over to make sure both sides were cooked 'properly' 🤮

since 90% of my meat is wild game the number one rule is NEVER over cook it ...it will be like a rubber tire over cooked medium at the most medium rare is perfect!

GF’s son is in linesman’s school in west central Tennessee, and we went down to see him for Thanksgiving. She asked him what he wanted as we probably couldn’t cook a turkey, he said STEAK! I said ok I can do that!! 
 

I got called up the piggly wiggly cuz I really like their bone in ribeyes they have and ordered 3 cut 1.25-.5”, I got them and they were more like 2” thick lol. Obviously wasn’t going to bring my pellet grill, so I utalized the air bnb’s electric oven amd brought mt small Weber charcoal grill. 
 

Rubbed them with beef tallow and heath riles jalapeño garlic rub. 170° in the oven till the steaks hit 100° about 45-60 min, then seared them on lump charcoal with some hickory chunks flipped at 115° then took them to about 130°. It was alittle nerve racking due to a new method and the cost of meat, but these were by far the best steaks I’ve ever made and everyone loved them
