Then, let it go a minute too long (yeah, I wasn't paying attention... ) on the first side. T-Bones "bend" and "bow up" when you make that mistake... I made up for it by going 1.5 minutes less on the flip, and it was still great. I'll fire up some pork chops with this rub, tomorrow afternoon...
