Ok guys! Here is a 13"x12.5" x1.5" lowly roundsteak marinated in garlic and Tajic and other Mexican spices and seared for four minutes at 580F on each side! Muy deliscioso!

Tri-tip is next on my list. Can't seem to find it any where though. 

I'm also due for a good beef tongue brown gravy. Most tender cut on a cow. 

Maybe find a local that butchers beef? It’s part of the sirloin, I’m assuming it’s the top cap
