I have been asked to smoke some pork for pulled pork sandwiches being served at my parents anniversary party, family thinks I do a great job but then they are all Yankees, minimal experience with real southern BBQ. So the question is shoulder or butt for the best pulled sandwich meat? I have smoked both at different times but can't say I know enough to be sure of my selection and will need 20-25 pounds so don't want to screw it up. I was thinking shoulder would give me the moistest meat, maybe some of each? I will have to smoke it then freeze it for a month since I will not be home in enough time to get it done right before the party, staying power while vacuum sealed and froze for a month is another factor, should be able to leave it whole as the old man has an industrial size vacuum sealer. On a side note I need a recipe for a vinegar based sauce. Cookies will be the sweet sauce, local made so no wiggle room there but I want to widen their horizons a bit. washguy Posted August 21, 2019 Report Share Posted August 21, 2019 JT the only advice I would give would be to get 3 or 4 smaller butts bone in to smoke rather than 2 giant butts.....they cook up faster and you will have a better handle on it........as for the month in a freezer.....yikes...I remember Shepp did some butts and froze em I think? He would know the answer on the freezing............ also there is wastage like the bone and the weird grey meat that you run into next to bone.....nasty !
