i winged it cut there wasn’t alit of meat like I wanted so I couldn’t probe it, I knew it was like brisket so I went off looks. When I pulled this one I left the other two ribs on for another hour, and they turned out way more fall off the bone and melted more fat away so we’re getting some where 🍖🍖

Fresh Lake Michigan coho, brushed with garlic ginger butter and grilled on my green mountain at 225* for an hour served with mango salsa, a side salad and a DDH IPA from Pipeworks in chicago
